If I order 2 Hanging Sea Urchin Air Plants -- Will they be two different plants? (Which is preferable.)
Also, it is for my granddaughters birthday... Would care instructions come with the plant(s)

Thank you for your question. With the Hanging Sea Urchin Air Plants, the style of plant is all the same. For a variety, we would recommend going with shells, the cypress stump or the glass teardrop globes since they are all available with different style air plants in them.

how do you water the plant, how long does it last and how would you ttransplant a plant like this?

A simple misting from a spray bottle once or twice a week is all that is needed to keep these plants living for a very long time. We've heard stories of these air plants lasting for years. They are extremely slow growing. We have not had anyone request that they be transplanted. The plant will be fine in it's existing container.

what if your urchin shell breaks? how do the plants continue to live? can they be planted?

These plants are extremely slow growers and extremely simple to take care of. We have never run into a situation where the shell broke. If that were to happen, you could simply glue the plant to a new base. These plants are not typically planted in soil. They can thrive on their own.
